  • 1 pound boneless skinless chicken thighs

  • 1/2 teaspoon chili powder
  • 2 tablespoons extra virgin olive oil (for chicken)
  • 1 medium jalapeño pepper, thinly sliced
  • 1 cup fresh raspberries

Instructions

  1. Prep the chicken: Season the chicken thighs with kosher salt, black pepper, and chili powder.
  2. Sear the chicken: Heat 2 tablespoons of olive oil in a non-stick skillet over medium-high heat and cook the chicken for about 4-5 minutes on each side until golden-brown.
  3. Make the sauce: Whisk together raspberry preserves, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, red pepper flakes, kosher salt, and black pepper in a bowl until smooth.
  4. Combine: Pour the raspberry glaze over the chicken in the pan and stir gently to coat each piece, letting it bubble and thicken for about 3-4 minutes.
  5. Add jalapeños and fresh raspberries in the last minute of cooking, folding them into the glaze.
  6. Plate and serve: Remove from heat, let rest for a couple of minutes, and serve hot over rice or with a fresh salad.

Notes

For a twist, substitute white wine vinegar for the apple cider vinegar or use honey instead of raspberry preserves. Adjust the spice level by modifying the amount of jalapeño and red pepper flakes.
