Sugar-Free Raspberry Cheesecake Donuts: A Guilt-Free Delight!

Ingredients

  • 1 cup almond flour
  • 1/2 cup cream cheese, softened
  • 1/2 cup unsweetened applesauce
  • 1/4 cup erythritol (or other sugar substitute)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 cup fresh raspberries

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a donut pan.
  2. In a mixing bowl, combine almond flour, erythritol, and baking powder.
  3. In another bowl, mix cream cheese, applesauce, eggs, and vanilla extract until smooth.
  4. Combine the wet and dry ingredients, mixing until well incorporated.
  5. Gently fold in the fresh raspberries.
  6. Pour the batter into the donut pan, filling each cavity about 3/4 full.
  7. Bake for 15-20 minutes or until a toothpick comes out clean.
  8. Let the donuts cool before removing them from the pan.

Notes

  • Store leftovers in an airtight container in the refrigerator.
  • These donuts can be frozen for up to 2 months.
  • Feel free to substitute raspberries with other berries if desired.
