Stuffed Sweet Potatoes

Delightful stuffed sweet potatoes filled with black beans, eggs, avocado, and fresh vegetables, offering a nutritious and flavorful meal.

  • 4 sweet potatoes
  • 4 eggs
  • 1 cup black beans
  • 1 avocado, diced
  • ½ cup cherry tomatoes, halved
  • ¼ cup green onions, sliced
  • 1 tsp cumin
  • Salt and pepper to taste
  • Cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pierce each sweet potato multiple times with a fork.
  3. Place the sweet potatoes on your baking tray and roast for 45 to 60 minutes.
  4. Heat your skillet over medium heat and fry the eggs to your preferred doneness.
  5. Once your sweet potatoes are finished, let them cool for a few minutes.
  6. Cut them in half lengthwise, and scoop out a small amount of flesh.
  7. Layer black beans, then top with fried egg, diced avocado, and halved cherry tomatoes.
  8. Sprinkle with cumin, salt, and pepper.
  9. Return to the oven for an additional 5 to 10 minutes.
  10. Garnish with green onions and cilantro just before serving.

Notes

Customize toppings and make them vegan by omitting eggs. Use quinoa or lentils for alternative fillings.
