Stuffed Sweet Potatoes with Eggs and Black Beans

  • 4 Sweet Potatoes
  • 4 Eggs
  • 1 Cup Black Beans
  • 1 Avocado (diced)
  • ½ Cup Cherry Tomatoes (halved)
  • ¼ Cup Green Onions (sliced)
  • 1 Tsp Cumin
  • Salt & Pepper
  • Cilantro

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Bake the sweet potatoes for 45-60 minutes.
  3. Cook the eggs in a skillet as desired.
  4. Prepare the baked sweet potatoes by slicing them in half and scooping out some flesh.
  5. Fill the sweet potatoes with black beans, cooked eggs, avocado, and tomatoes.
  6. Final bake for an additional 5-10 minutes.
  7. Garnish with green onions and cilantro before serving.
