Spinach and Mushroom Egg Strata: A Breakfast Delight to Savor!

A delicious and hearty breakfast dish made with layers of spinach, mushrooms, and eggs, perfect for a weekend brunch.

  • 6 large eggs
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 cup milk
  • 1 cup shredded cheese (cheddar or your choice)
  • 4 cups bread, cubed
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs, milk, salt, pepper, and garlic powder.
  3. In a skillet, sauté the mushrooms until soft, then add the spinach and cook until wilted.
  4. In a greased baking dish, layer half of the bread cubes, followed by the sautéed spinach and mushrooms, and half of the cheese.
  5. Pour half of the egg mixture over the layers.
  6. Repeat the layers with the remaining bread, vegetables, cheese, and egg mixture.
  7. Bake for 30-35 minutes or until the egg is set and the top is golden brown.
  8. Let it cool for a few minutes before serving.

Notes

  • Feel free to add other vegetables or meats as desired.
  • This dish can be prepared the night before and baked in the morning.
  • Store leftovers in the refrigerator for up to 3 days.
