- 6 large eggs
- 2 cups fresh spinach, chopped
- 1 cup mushrooms, sliced
- 1 cup milk
- 1 cup shredded cheese (cheddar or your choice)
- 4 cups bread, cubed
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together the eggs, milk, salt, pepper, and garlic powder.
- In a skillet, sauté the mushrooms until soft, then add the spinach and cook until wilted.
- In a greased baking dish, layer half of the bread cubes, followed by the sautéed spinach and mushrooms, and half of the cheese.
- Pour half of the egg mixture over the layers.
- Repeat the layers with the remaining bread, vegetables, cheese, and egg mixture.
- Bake for 30-35 minutes or until the egg is set and the top is golden brown.
- Let it cool for a few minutes before serving.
Notes
- Feel free to add other vegetables or meats as desired.
- This dish can be prepared the night before and baked in the morning.
- Store leftovers in the refrigerator for up to 3 days.
