Spinach and Cheese Stuffed Portobello Mushroom Delights Await!

Delicious and healthy Spinach and Cheese Stuffed Portobello Mushrooms, perfect for a savory appetizer or a light meal.

  • 4 large Portobello mushrooms
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Clean the Portobello mushrooms and remove the stems.
  3. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  4. Add chopped spinach and cook until wilted. Remove from heat.
  5. In a bowl, mix ricotta cheese, mozzarella cheese, Parmesan cheese, sautéed spinach, salt, pepper, and Italian seasoning.
  6. Stuff each Portobello mushroom cap with the cheese and spinach mixture.
  7. Place the stuffed mushrooms on a baking sheet and bake for 20-25 minutes, or until the mushrooms are tender and the cheese is bubbly.
  8. Serve warm and enjoy!

Notes

  • Feel free to add other vegetables or spices to the stuffing for extra flavor.
