- 1 medium spaghetti squash
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 cup heavy cream
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 cup breadcrumbs
- 2 tablespoons olive oil
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Drizzle olive oil on the cut sides and season with salt and pepper.
- Place the squash cut side down on a baking sheet and roast for 30-40 minutes until tender.
- Once cooked, scrape the flesh with a fork to create spaghetti-like strands.
- In a mixing bowl, combine the spaghetti squash strands, mozzarella cheese, Parmesan cheese, heavy cream, garlic powder, onion powder, salt, and pepper.
- Transfer the mixture to a greased baking dish.
- In a separate bowl, mix breadcrumbs with olive oil and sprinkle over the top of the squash mixture.
- Bake for an additional 20-25 minutes until the top is golden brown and bubbly.
- Let it cool for a few minutes before serving.
