  • 1 medium spaghetti squash
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup breadcrumbs
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Drizzle olive oil on the cut sides and season with salt and pepper.
  4. Place the squash cut side down on a baking sheet and roast for 30-40 minutes until tender.
  5. Once cooked, scrape the flesh with a fork to create spaghetti-like strands.
  6. In a mixing bowl, combine the spaghetti squash strands, mozzarella cheese, Parmesan cheese, heavy cream, garlic powder, onion powder, salt, and pepper.
  7. Transfer the mixture to a greased baking dish.
  8. In a separate bowl, mix breadcrumbs with olive oil and sprinkle over the top of the squash mixture.
  9. Bake for an additional 20-25 minutes until the top is golden brown and bubbly.
  10. Let it cool for a few minutes before serving.
