Southern-Style Honey Butter Cornbread Poppers

Deliciously sweet and savory mini cornbread poppers, perfect for any occasion.

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup honey
  • 1/2 cup butter, melted
  • 2 large eggs

Instructions

  1. Preheat your oven to 400°F (200°C) and grease your mini muffin tin generously.
  2. Mix the cornmeal, flour, sugar, baking powder, and salt in a mixing bowl.
  3. Blend the milk, honey, melted butter, and eggs in another bowl.
  4. Combine the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fill the mini muffin tin about 2/3 full with the batter.
  6. Bake for 12-15 minutes or until golden brown and a toothpick comes out clean.
  7. Cool slightly and remove from the tin. Serve warm.

Notes

You can customize the poppers by adding jalapeños or cheese for extra flavor.
