Soft-Baked Lemon Zucchini Cookies

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, sugar, and brown sugar until light and fluffy, about 3-5 minutes.
  3. Beat in the egg and vanilla extract until well blended.
  4. Stir in the grated zucchini, lemon zest, and lemon juice.
  5. Whisk together the flour, baking powder, baking soda, and salt in another bowl.
  6. Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined.
  7. Drop spoonfuls of cookie dough onto the prepared baking sheet, spacing them apart.
  8. Bake for 10-12 minutes or until the edges are lightly golden while keeping the centers soft.
  9. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Chill the dough for up to 24 hours for enhanced flavor. Consider adding white chocolate chips or chopped nuts for extra flavor.
