A creamy and flavorful slow cooker dish featuring chicken, sun-dried tomatoes, and spinach in a rich Alfredo sauce.

  • 4 boneless, skinless chicken breasts
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 8 ounces fettuccine pasta

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Add the sun-dried tomatoes, spinach, garlic, Italian seasoning, salt, and pepper.
  3. Pour the heavy cream over the chicken and vegetables.
  4. Cover and cook on low for 6-7 hours or until the chicken is cooked through.
  5. Before serving, stir in the Parmesan cheese until melted and combined.
  6. Cook the fettuccine pasta according to package instructions and serve with the Tuscan chicken Alfredo.

  • For a lighter version, you can use half-and-half instead of heavy cream.
