Slow Cooker Garlic Butter Beef with Potatoes

A comforting dish of tender beef chuck roast and buttery Yukon Gold potatoes slow-cooked to perfection, infused with garlic and herbs.

  • 2.5 lbs beef chuck roast, cut into large chunks
  • Salt and black pepper, to taste
  • 2 tbsp olive oil (for searing, optional)
  • 6 tbsp unsalted butter, melted
  • 5 cloves garlic, minced
  • 1 tsp dried Italian herbs
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1/4 cup fresh parsley, chopped (plus more for garnish)
  • 2 lbs baby Yukon Gold potatoes, halved
  • 1/2 cup low-sodium beef broth
  • 1 medium onion, sliced (optional)
  • 1 cup carrots, chopped (optional)

Instructions

  1. Prep the beef: Pat the beef chunks dry and season with salt and pepper.
  2. Sear the meat: Heat olive oil in a skillet and sear beef chunks for 2-3 minutes on each side.
  3. Layer the potatoes: Place halved potatoes in the bottom of the slow cooker.
  4. Add the beef: Place the beef atop the potatoes and add onions and carrots if using.
  5. Create the garlic butter sauce: Melt butter and mix in garlic, herbs, red pepper flakes, and parsley.
  6. Combine ingredients: Pour beef broth over everything and drizzle with garlic butter sauce.
  7. Slow cook: Cover and cook on LOW for 7-8 hours or HIGH for 4-5 hours.
  8. Taste and adjust: Before serving, taste the sauce and adjust seasoning if necessary.
  9. Serve and enjoy: Transfer to a platter, drizzle with sauce, and garnish with parsley.

Notes

Feel free to swap vegetables based on what you have on hand. You can also prepare the dish in advance and refrigerate overnight before cooking.
