Slow Cooker Black Bean Soup: A Hearty Delight Awaits!

A delicious and hearty slow cooker black bean soup that is perfect for any occasion.

  • 1 pound dried black beans
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 carrot, diced
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Juice of 1 lime

Instructions

  1. Rinse and sort the black beans, then place them in the slow cooker.
  2. Add the chopped onion, garlic, bell pepper, and carrot to the slow cooker.
  3. Pour in the vegetable broth and add the cumin, chili powder, salt, and pepper.
  4. Stir the ingredients to combine well.
  5. Cover and cook on low for 8 hours or on high for 4 hours.
  6. Once cooked, use an immersion blender to blend the soup to your desired consistency.
  7. Stir in the lime juice before serving.
