Simple Keto White Chicken Chili

A creamy and hearty white chicken chili with a blend of spices and savory flavors, perfect for chilly evenings or meal prep.

  • 1 lb Chicken Breast, Cooked and Shredded
  • 1 Tablespoon Olive Oil
  • 1 Onion, Diced
  • 2 Cloves Garlic, Minced
  • 2 Cans (15 oz each) White Beans, Drained and Rinsed
  • 4 Cups Chicken Broth
  • 1 Can (4 oz) Green Chiles
  • 1 Teaspoon Cumin
  • 1 Teaspoon Chili Powder
  • Salt and Pepper to Taste
  • 1 Cup Heavy Cream
  • Fresh Cilantro for Garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and sauté until softened, about 3–5 minutes.
  3. Stir in the minced garlic and cook for another minute.
  4. Add the shredded chicken, white beans, chicken broth, green chiles, cumin, chili powder, salt, and pepper. Stir to combine.
  5. Bring the pot to a gentle boil, then reduce the heat to low and let it simmer for 20 minutes.
  6. Gently stir in the heavy cream, letting it warm through without boiling.
  7. Serve hot, garnished with fresh cilantro.

Notes

Consider using rotisserie chicken for a quicker option. This chili stores well and makes great leftovers. It’s perfect for meal prep and can be frozen for up to three months.
