Simple Pasta Primavera

A vibrant and comforting pasta dish bursting with fresh vegetables and a homemade sauce, perfect for any weeknight dinner.

  • 8 ounces pasta (spaghetti, penne, or your favorite)
  • 1 cup fresh bell peppers, sliced
  • 1 cup zucchini, sliced
  • 1 cup carrots, sliced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • Fresh herbs (basil, parsley, or oregano) to taste
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Boil the pasta: In a large pot, bring salted water to a boil. Add your pasta and cook according to package instructions until al dente. Reserve a cup of pasta water before draining.
  2. Sauté the aromatics: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and diced onion. Sauté for 2-3 minutes until softened.
  3. Add the veggies: Toss in sliced bell peppers, zucchini, and carrots. Stir often and cook for 5-7 minutes until softened and caramelized.
  4. Combine: Pour the drained pasta into the skillet with veggies. Season with salt, pepper, and fresh herbs. Stir in reserved pasta water as needed.
  5. Serve immediately, drizzled with olive oil and topped with Parmesan cheese if desired.

Notes

Make-ahead tips: Chop vegetables in advance and store in the fridge for up to two days.
