Shrimp Zucchini Noodle Bowls with Avocado Sauce Delight!

A delicious and healthy dish featuring shrimp and zucchini noodles topped with a creamy avocado sauce.

  • 1 pound shrimp, peeled and deveined
  • 4 medium zucchinis, spiralized
  • 2 ripe avocados
  • 2 tablespoons lime juice
  • 2 cloves garlic
  • 1/4 cup fresh cilantro
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add shrimp and cook until pink and opaque, about 3-4 minutes.
  3. In a blender, combine avocados, lime juice, garlic, cilantro, salt, and pepper. Blend until smooth.
  4. Add spiralized zucchini to the skillet and sauté for 2-3 minutes until slightly tender.
  5. Serve the zucchini noodles topped with shrimp and drizzle with avocado sauce.

Notes

  • For a spicier kick, add red pepper flakes to the shrimp while cooking.
  • Make sure to not overcook the zucchini noodles to maintain their crunch.
  • This dish can be served warm or cold.
