Shrimp Stuffed Pasta Rolls

Ingredients

  • Pasta sheets (lasagna noodles)
  • Shrimp, peeled and deveined
  • Fresh spinach
  • Ricotta cheese
  • Cream
  • Roasted red peppers
  • Garlic
  • Olive oil
  • Salt
  • Pepper
  • Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the pasta sheets according to package instructions and set aside.
  3. Heat olive oil in a skillet over medium heat. Add the garlic and sauté until fragrant, about 1 minute.
  4. Add the spinach and cook until wilted.
  5. Combine the sautéed spinach, shrimp, and ricotta in a bowl. Season with salt and pepper.
  6. Place portions of the shrimp mixture on each pasta sheet and roll up.
  7. Blend roasted red peppers and cream to create the sauce.
  8. Spread red pepper sauce at the bottom of a baking dish.
  9. Arrange the stuffed pasta rolls seam-side down in the dish and pour more sauce over them.
  10. Sprinkle with Parmesan cheese.
  11. Bake for 25-30 minutes until heated through and bubbly.
  12. Serve warm and enjoy!
