- 1 lb shrimp, peeled and deveined
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 4 large flour tortillas
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
- In a bowl, season the shrimp with garlic powder, paprika, salt, and pepper.
- Heat olive oil in a skillet over medium heat and cook the shrimp until pink and cooked through, about 3-4 minutes.
- Remove the shrimp from the skillet and set aside.
- In the same skillet, place one tortilla and sprinkle half of the cheese on one half of the tortilla.
- Add a portion of the cooked shrimp on top of the cheese.
- Sprinkle the remaining cheese over the shrimp and fold the tortilla in half.
- Cook for 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted.
- Repeat with the remaining tortillas and filling.
- Slice the quesadillas and serve hot, garnished with fresh cilantro if desired.
