Sheet Pan Balsamic Chicken is a flavorful and easy one-pan meal that combines tender chicken with roasted vegetables, all drizzled with a tangy balsamic glaze.

  • 4 boneless, skinless chicken breasts
  • 1 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups broccoli florets
  • 2 cups cherry tomatoes
  • 1 red onion, sliced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, whisk together balsamic vinegar, olive oil, honey, garlic, oregano, salt, and pepper.
  3. Place chicken breasts on a sheet pan and pour half of the balsamic mixture over them.
  4. Add the broccoli, cherry tomatoes, and red onion to the pan.
  5. Drizzle the remaining balsamic mixture over the vegetables.
  6. Bake for 25-30 minutes or until the chicken is cooked through and the vegetables are tender.
