Savory Garden Zucchini Casserole

  • 3 medium zucchinis, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup breadcrumbs
  • 2 tablespoons olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the chopped onions in olive oil in a large skillet over medium heat until translucent, about 5 minutes.
  3. Add the minced garlic and cook for an additional 1-2 minutes.
  4. Incorporate the zucchini and cherry tomatoes into the skillet, seasoning with salt, pepper, basil, and oregano. Cook for 5-7 minutes.
  5. Prepare a greased baking dish and spread the sautéed vegetable mixture evenly in it.
  6. Mix grated Parmesan, shredded mozzarella, and breadcrumbs in a small bowl to create the topping.
  7. Sprinkle the cheese-breadcrumb mix over the vegetables and bake for 25-30 minutes until golden brown.
  8. Garnish with chopped parsley before serving.

Notes

For a make-ahead option, prepare the vegetable mixture the night before and assemble before baking. Customize the recipe with different vegetables or cheeses as desired.
