Ultimate Veggie Sandwich

A wholesome and customizable veggie sandwich that balances crunch and creaminess, perfect for any occasion.

Ingredients

  • 2 slices of whole-grain or sourdough bread
  • 1 cup fresh spinach
  • 1 medium tomato, sliced
  • 1/2 bell pepper, sliced
  • 1/2 cup melted mozzarella or gouda cheese (or vegan cheese)
  • 2 tablespoons zesty aioli or creamy hummus
  • Fresh herbs (basil, parsley, or oregano) to taste

Instructions

  1. Prepare Your Ingredients: Wash and slice your vegetables uniformly.
  2. Toast the Bread: In a pan over medium heat, toast the bread slices until golden.
  3. Layer the Ingredients: Spread sauce on one slice of bread, layer spinach, tomatoes, bell peppers, and cheese.
  4. Top It Off: Close the sandwich and press down gently.
  5. Cook Until Golden: Return to the pan, cook on low heat for 3-4 minutes each side until crispy and melted.
  6. Slice and Serve: Allow to cool slightly, then slice in half and enjoy!

Notes
