Rum-Soaked Fried Pineapple

Delicious fried pineapple rings infused with dark and coconut rum, coated in crispy coconut flakes, served with a creamy dipping sauce.

  • 1 cup dark rum
  • 1 cup coconut rum
  • 1 ½ cups all-purpose flour
  • 10 oz sweetened coconut flakes
  • 2 large eggs
  • ½ cup coconut milk
  • Vegetable oil for frying
  • 4 oz cream cheese, softened
  • ½ cup powdered sugar

Instructions

  1. Soak the pineapple: Place the pineapple rings in a bowl and pour over the dark and coconut rums. Let them soak for at least one hour.
  2. Prepare the breading station: Set up three shallow bowls with flour, egg mixture, and coconut flakes.
  3. Bread the pineapple: Dip each ring in flour, then egg mixture, and roll in coconut flakes.
  4. Heat the oil: In a deep pot, heat vegetable oil to 350°F (175°C).
  5. Fry the rings: Carefully lower the breaded pineapple into the hot oil, frying for about 1 minute until golden brown.
  6. Make the dipping sauce: Blend softened cream cheese and powdered sugar until smooth, adding a splash of reserved rum if desired.

Notes

Soak pineapple rings the night before for enhanced flavor. Consider air frying for a healthier option.
