  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 2 tablespoons olive oil (for cooking)
  • 1 cup crumbled feta cheese
  • 1 cup fresh spinach, chopped
  • ½ cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • ½ teaspoon red pepper flakes (optional)
  • 1 tablespoon olive oil (for searing)

Instructions

  1. Prepare the chicken by laying the breasts flat and slicing horizontally or pouncing them to uniform thickness.
  2. Season both sides with salt, black pepper, garlic powder, oregano, and paprika.
  3. Combine feta cheese, spinach, sun-dried tomatoes, minced garlic, and red pepper flakes in a bowl for the filling.
  4. Fill each chicken breast with the mixture and roll tightly, securing with toothpicks or twine.
  5. Sear the rolls in a hot skillet with olive oil for 4-5 minutes until golden brown.
  6. Bake the chicken at 375°F (190°C) for 20-25 minutes until fully cooked, then let rest before slicing.

Notes

For a make-ahead option, prepare the filling and rolls a day before and store in the fridge. You may also use chicken thighs for a juicier bite.
