Roasted Red Pepper, Spinach, and Mozzarella Stuffed Chicken

A delightful stuffed chicken dish with roasted red peppers, spinach, and gooey mozzarella, perfect for any occasion.

  • 4 chicken breasts
  • 1 cup roasted red peppers, chopped
  • 1 cup fresh spinach, chopped
  • 1 cup mozzarella cheese, shredded
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a skillet over medium heat. Add the minced garlic, sautéing it until fragrant.
  3. Stir in the chopped roasted red peppers and fresh spinach, cooking until the spinach wilts.
  4. Remove the skillet from heat and mix in the shredded mozzarella.
  5. Season the chicken breasts with salt, pepper, and Italian seasoning.
  6. Using a sharp knife, cut a pocket into each chicken breast.
  7. Stuff each pocket with the roasted red pepper, spinach, and cheese mixture.
  8. Nestle the stuffed chicken in a greased baking dish and bake for 25-30 minutes, or until cooked through.
  9. Allow the chicken to rest for a few minutes before serving.

Notes

For a quicker option, use an air fryer at 375°F (190°C) for about 20 minutes for crispy results.
