Roasted Red Pepper, Spinach, and Mozzarella Stuffed Chicken

A delightful stuffed chicken breast filled with roasted red peppers, fresh spinach, and creamy mozzarella, perfect for weeknight dinners and gatherings.

  • 4 boneless, skinless chicken breasts
  • 1 cup roasted red peppers, chopped
  • 1 cup fresh spinach, chopped
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine the chopped roasted red peppers, fresh spinach, shredded mozzarella, garlic powder, salt, and pepper in a bowl.
  3. Cut a pocket in each chicken breast, being careful not to slice all the way through.
  4. Stuff each pocket with the filling mixture, pressing gently to pack it in.
  5. Heat the olive oil in a skillet over medium heat and sear each chicken breast for 4-5 minutes on each side.
  6. Transfer the seared chicken to a baking dish and bake for 20-25 minutes until cooked through to 165°F (75°C).
  7. Serve warm with a side salad or garlic bread.

Notes

Make filling ahead of time and refrigerate. You can also use air fryer at 360°F (182°C) for 15-20 minutes.
