Roasted Carrot and Apple Soup: A Comforting Delight!

A warm and comforting soup made with roasted carrots and apples, perfect for chilly days.

Ingredients

  • 4 large carrots, peeled and chopped
  • 2 apples, peeled, cored, and chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon thyme
  • 1/2 cup cream (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the chopped carrots, apples, onion, and garlic with olive oil, salt, and pepper on a baking sheet.
  3. Roast in the oven for 25-30 minutes until tender and caramelized.
  4. Transfer the roasted vegetables to a pot and add the vegetable broth and thyme.
  5. Bring to a boil, then reduce heat and simmer for 10 minutes.
  6. Blend the soup until smooth using an immersion blender or a regular blender.
  7. If desired, stir in cream for added richness.
  8. Serve hot, garnished with fresh herbs if desired.

Notes

  • For a vegan version, omit the cream or use a plant-based alternative.
  • This soup can be stored in the refrigerator for up to 3 days.
  • Freezes well for up to 2 months.
