- 4 large carrots, peeled and chopped
- 2 apples, peeled, cored, and chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon thyme
- 1/2 cup cream (optional)
- Preheat the oven to 400°F (200°C).
- Toss the chopped carrots, apples, onion, and garlic with olive oil, salt, and pepper on a baking sheet.
- Roast in the oven for 25-30 minutes until tender and caramelized.
- Transfer the roasted vegetables to a pot and add the vegetable broth and thyme.
- Bring to a boil, then reduce heat and simmer for 10 minutes.
- Blend the soup until smooth using an immersion blender or a regular blender.
- If desired, stir in cream for added richness.
- Serve hot, garnished with fresh herbs if desired.
Notes
- For a vegan version, omit the cream or use a plant-based alternative.
- This soup can be stored in the refrigerator for up to 3 days.
