  • 1 teaspoon vanilla extract
  • 1/2 cup cream cheese, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy.
  4. Add the egg, food coloring, and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges are set.
  8. Let the cookies cool completely on a wire rack.
  9. For the frosting, beat the cream cheese and powdered sugar together with vanilla extract until smooth.
  10. Spread the cream cheese frosting on top of the cooled cookies.
