Instructions

  1. Prepare the Cake Pans: Grease and line two 9-inch round cake pans with parchment paper.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, cocoa powder, baking soda, and salt.
  3. Combine Wet Ingredients: In another bowl, stir together buttermilk, vegetable oil, eggs, vinegar, vanilla extract, and red food coloring until well combined.
  4. Bring It Together: Gradually add the wet mixture to the dry ingredients. Stir gently until everything blends smoothly.
  5. Prepare the Cheesecake Filling: In a separate bowl, beat the cream cheese until smooth, then add powdered sugar and vanilla extract, beating until fluffy.
  6. Assemble: Pour half of the red velvet batter into each cake pan, add spoonfuls of the cheesecake filling, and create swirls with a knife.
  7. Bake: Place the pans in the preheated oven and bake for 30-35 minutes, or until a toothpick comes out clean. Cool in the pans for 10 minutes.
  8. Frosting Time: Frost with the remaining cheesecake filling or cream cheese frosting, using an offset spatula for finish.

Notes

You can bake the cakes in advance and store them wrapped in plastic for enhanced flavor. Experiment with toppings such as chocolate shavings or fresh berries.
