Raspberry Cream Cheese Bites

Delightful raspberry and cream cheese bites enveloped in flaky puff pastry, perfect for any occasion.

Ingredients

  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 cup fresh raspberries (or raspberry puree)
  • 1 teaspoon vanilla extract
  • 1 package of puff pastry sheets (thawed)
  • 1 egg (for egg wash)
  • Granulated sugar (for sprinkling)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the cream cheese, powdered sugar, raspberries, and vanilla extract until smooth.
  3. Roll out the puff pastry and cut it into small squares.
  4. Place a small spoonful of the cream cheese filling in the center of each square.
  5. Fold the corners of the pastry over the filling and pinch to seal.
  6. Brush the tops with beaten egg and sprinkle with granulated sugar.
  7. Bake in the preheated oven for 15-20 minutes or until golden brown.
  8. Let cool slightly before serving.

Notes

These can be stored in an airtight container in the fridge for up to three days. Reheat in the oven to restore crispness.
