Raspberry Cream Cheese Bites

These delightful Raspberry Cream Cheese Bites are filled with creamy richness and tart raspberries, all wrapped in a golden, flaky pastry.

Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup raspberries (fresh or frozen)
  • 1 package of puff pastry sheets
  • 1 egg (for egg wash)
  • Sugar for sprinkling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Beat the cream cheese, powdered sugar, and vanilla extract until smooth.
  3. Prepare the puff pastry by rolling it out and cutting it into 3-inch squares.
  4. Add a spoonful of cream cheese mixture and a few raspberries to the center of each square.
  5. Seal the pastry corners to enclose the filling securely.
  6. Brush the tops with egg wash and sprinkle with sugar.
  7. Bake for 15-20 minutes until golden brown.
  8. Cool on a wire rack before serving.

Notes

Make the cream cheese filling a day in advance and store it in the fridge. These bites can also be frozen before baking.
