- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup heavy cream
- 1 large egg
- 1 teaspoon almond extract
- 1 cup fresh raspberries
- 1/4 cup sliced almonds (for topping)
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the cold cubed butter and mix until the mixture resembles coarse crumbs.
- In a separate bowl, whisk together the heavy cream, egg, and almond extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Gently fold in the raspberries.
- Turn the dough onto a floured surface and pat it into a circle about 1 inch thick.
- Cut the dough into wedges and place them on the prepared baking sheet.
- Sprinkle sliced almonds on top of each scone.
