Ingredients

  • Flour tortillas – 4
  • Shredded cheese (cheddar or mozzarella) – 2 cups
  • Cooked chicken or beef (optional) – 1 cup
  • Bell peppers, sliced – 1 cup
  • Onion, sliced – 1/2 cup
  • Olive oil – 2 tablespoons
  • Salt – to taste
  • Pepper – to taste

Instructions

  1. Heat a skillet over medium heat and add olive oil.
  2. Add sliced onions and bell peppers, sauté until soft.
  3. Place one tortilla in the skillet, sprinkle half of the cheese on one half of the tortilla.
  4. Add cooked chicken or beef if using, then top with the sautéed vegetables and remaining cheese.
  5. Fold the tortilla in half and cook until golden brown, about 2-3 minutes on each side.
  6. Remove from skillet, slice into wedges, and serve with salsa or guacamole.
