Ingredients

  • 8 oz cream cheese, softened
  • 1 cup pumpkin puree
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1 cup whipped cream
  • 1 cup graham cracker crumbs
  • 1/4 cup melted butter
  • 1/4 cup brown sugar

Instructions

  1. In a mixing bowl, beat the cream cheese until smooth.
  2. Add the pumpkin puree, powdered sugar, vanilla extract, and pumpkin pie spice. Mix until well combined.
  3. Fold in the whipped cream gently until fully incorporated.
  4. In another bowl, combine graham cracker crumbs, melted butter, and brown sugar.
  5. Layer the graham cracker mixture and pumpkin cheesecake mixture in serving glasses.
  6. Repeat the layers until the glasses are filled.
  7. Chill in the refrigerator for at least 2 hours before serving.

Notes

  • For a gluten-free version, use gluten-free graham crackers.
  • Can be made a day in advance for convenience.
  • Top with additional whipped cream and a sprinkle of pumpkin pie spice before serving.
