- 2 cups rolled oats
- 1 cup pumpkin seeds
- 1/2 cup honey or maple syrup
- 1/2 cup almond butter
- 1/2 cup dried cranberries
- 1/4 cup chia seeds
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
- In a large bowl, mix together the rolled oats, pumpkin seeds, chia seeds, dried cranberries, cinnamon, and salt.
- In a small saucepan, combine the honey (or maple syrup) and almond butter over low heat until melted and well combined.
- Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
- Transfer the mixture to the prepared baking dish and press it down firmly.
- Bake for 20-25 minutes or until golden brown.
- Allow to cool completely before cutting into bars.
Notes
- Store in an airtight container for up to a week.
- Feel free to substitute other nuts or seeds based on your preference.
- For a sweeter bar, add more honey or maple syrup.
