Pumpkin-Seed Granola Bars: Fuel Your Day Deliciously!

Ingredients

  • 2 cups rolled oats
  • 1 cup pumpkin seeds
  • 1/2 cup honey or maple syrup
  • 1/2 cup almond butter
  • 1/2 cup dried cranberries
  • 1/4 cup chia seeds
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a large bowl, mix together the rolled oats, pumpkin seeds, chia seeds, dried cranberries, cinnamon, and salt.
  3. In a small saucepan, combine the honey (or maple syrup) and almond butter over low heat until melted and well combined.
  4. Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
  5. Transfer the mixture to the prepared baking dish and press it down firmly.
  6. Bake for 20-25 minutes or until golden brown.
  7. Allow to cool completely before cutting into bars.

Notes

  • Store in an airtight container for up to a week.
  • Feel free to substitute other nuts or seeds based on your preference.
  • For a sweeter bar, add more honey or maple syrup.
