  • 1 cup canned pumpkin puree
  • 1/2 cup almond milk
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, combine the rolled oats, pumpkin puree, almond milk, honey or maple syrup, cinnamon, nutmeg, salt, and baking powder.
  3. If using, fold in the chopped nuts.
  4. Pour the mixture into the prepared baking dish and spread it evenly.
  5. Bake for 25-30 minutes or until the edges are golden brown.
  6. Allow to cool before cutting into bars.
