- 1 cup pumpkin puree
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup milk
- 1 large egg
- Oil for frying
- 1/4 cup sugar (for coating)
- 1 teaspoon cinnamon (for coating)
- In a large bowl, mix together pumpkin puree, milk, and egg.
- In another bowl, combine flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Heat oil in a deep pan over medium heat.
- Drop spoonfuls of the batter into the hot oil and fry until golden brown on both sides.
- Remove fritters and drain on paper towels.
- In a small bowl, mix together sugar and cinnamon for coating.
- While still warm, toss fritters in the cinnamon sugar mixture.
