Pistachio Raspberry Crunch Cheesecake

A luxurious cheesecake with a creamy filling, tart raspberries, and crunchy pistachios, perfect for any celebration.

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar
  • 3 (8 oz) packages cream cheese, softened
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup fresh raspberries
  • 1/2 cup pistachios, chopped
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 325°F (163°C) and grease the sides of a 9-inch springform pan.
  2. Combine the graham cracker crumbs and melted butter in a medium mixing bowl.
  3. Press the mixture firmly into the bottom of your prepared pan.
  4. Beat together the cream cheese, sugar, and vanilla extract in a large mixing bowl.
  5. Add the eggs one by one, mixing well after each addition.
  6. Fold in the raspberries and chopped pistachios using a rubber spatula.
  7. Pour the cheesecake batter over the crust and smooth the top.
  8. Bake for 50-60 minutes or until the center is set but slightly jiggly.
  9. Cool completely on a wire rack.
  10. Whip together the heavy cream and powdered sugar until soft peaks form.
  11. Spread the whipped cream over the cooled cheesecake and garnish as desired.
  12. Refrigerate for at least 4 hours before serving.

Notes

This cheesecake can be made a day in advance. Feel free to customize with different berries or a chocolate ganache topping.
