Pink Coconut Snowball Cake Bars

Delightful pink bars filled with rich coconut flavor and a creamy icing, perfect for any occasion.

  • 1 box pink cake mix
  • 1/2 cup unsweetened coconut flakes
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup powdered sugar
  • 2 tablespoons milk (for icing)
  • Additional coconut flakes for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and generously grease a baking pan.
  2. Combine the pink cake mix, coconut flakes, milk, vegetable oil, and eggs in a large bowl until smooth.
  3. Pour the batter into the prepared baking pan, spreading it evenly.
  4. Bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
  5. Allow the cake to cool completely in the pan on a wire rack.
  6. Mix the powdered sugar and 2 tablespoons of milk for icing consistency.
  7. Drizzle the icing over your cooled cake and sprinkle with coconut flakes.
  8. Cut into bars and serve.

Notes

These bars freeze well. Cut and freeze in an airtight container for up to two months.
