Pineapple Glazed Salmon

A vibrant and flavorful dish featuring succulent salmon fillets topped with a sweet and tangy pineapple glaze, perfect for any occasion.

  • 4 salmon fillets, approximately 6 ounces each
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup fresh or canned pineapple, diced and well-drained
  • 1/4 cup packed light brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon minced garlic
  • 1/2 teaspoon grated fresh ginger (optional)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Lightly grease a baking dish suitable for the salmon fillets.
  3. In a small bowl, whisk together the brown sugar, soy sauce, rice vinegar, minced garlic, and grated ginger (if using) to create the glaze.
  4. Pat the salmon fillets dry with paper towels.
  5. Rub each fillet with olive oil and season with salt and black pepper.
  6. Place the salmon fillets skin-side down into the prepared baking dish.
  7. Spoon two-thirds of the pineapple glaze over each fillet and scatter diced pineapple around.
  8. Bake for 12 to 15 minutes until the salmon flakes easily with a fork.
  9. Broil for an additional 1 to 2 minutes for a caramelized finish.
  10. Remove the dish from the oven and let the salmon rest for about 5 minutes before serving.
  11. Garnish with freshly chopped parsley and serve warm.

Notes

Make the glaze ahead of time and store in an airtight container. For a spicier touch, add sriracha or experiment with citrus zest.
