  • 1 ripe mango, peeled and diced

Instructions

  1. Prepare the Coconut Milk Base: In a mixing bowl, combine coconut milk, chia seeds, maple syrup, and vanilla extract. Whisk together until smoothly blended.
  2. Let It Set: Allow the pudding to sit for about 10 minutes to let the chia seeds soak up the coconut milk.
  3. Chill for Optimal Texture: Transfer the mixture into jars or a container and refrigerate for at least 4 hours.
  4. Prepare the Mango Topping: Peel and dice the ripe mango into small cubes.
  5. Serve: Spoon the pudding into bowls, layering with diced mango on top.

Notes

For an extra flavor burst, add a squeeze of fresh lime juice to the mango topping just before serving.
