- 1 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 4 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 1 cup chocolate chips
- Crushed peppermint candies for topping
- Preheat the oven to 350°F (175°C) and grease a mini muffin tin.
- In a large bowl, mix together cocoa powder, granulated sugar, and brown sugar.
- Add melted butter, eggs, vanilla extract, and peppermint extract to the dry ingredients and mix until well combined.
- Stir in flour and salt until just combined, then fold in chocolate chips.
- Pour the batter into the mini muffin tin, filling each cup about 2/3 full.
- Bake for 12-15 minutes or until a toothpick inserted comes out clean.
- Let cool for a few minutes before removing from the tin.
- Top with crushed peppermint candies while still warm.
