One-Pan Steak Queso Rice

A comforting one-pan meal featuring seared steak, rice, and creamy queso, perfect for busy weeknights or sharing with friends and family.

  • 1 lb steak, diced
  • 1 cup rice
  • 2 cups chicken broth
  • 1 cup creamy queso
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat until shimmering.
  2. Add the diced steak to the skillet, season with salt and pepper, and sear until browned on all sides, about 5-7 minutes.
  3. Remove the steak from the skillet and set aside.
  4. In the same skillet, sauté the onion and bell pepper until the onion is soft and translucent, about 3-4 minutes.
  5. Add the rice and cook for an additional minute to lightly toast it.
  6. Pour in the chicken broth and bring to a boil.
  7. Reduce heat, cover, and let simmer until the rice is tender and has absorbed the liquid, about 15-20 minutes.
  8. Fold in the cooked steak and creamy queso, stirring until fully combined.
  9. Serve warm and enjoy!
