One-Pan Lemon Garlic Shrimp and Zucchini Noodles

A light and elegant dish featuring plump shrimp and spiralized zucchini, drizzled with a buttery lemon garlic sauce.

  • 2 medium zucchini, spiralized
  • 4 cloves garlic, minced
  • 2 tablespoons butter
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Melt the butter in a large skillet over medium heat.
  2. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Introduce the shrimp, season with salt and pepper, and cook for approximately 2-3 minutes per side until pink.
  4. Stir in the spiralized zucchini and lemon juice, cooking for an additional 2-3 minutes until noodles are tender but still crunchy.
  5. Serve hot, garnished with chopped parsley.

Notes

Make-ahead tips: Spiralize the zucchini and prep the shrimp in advance. Store separately in the fridge.
