No-Bake Lemon Cheesecake

A creamy, dreamy dessert that balances tartness and sweetness, all without baking.

  • 8 oz cream cheese
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream
  • 1/2 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 package graham cracker crust
  • Optional: fresh lemon slices for garnish

Instructions

  1. Beat the cream cheese in a mixing bowl until smooth and creamy.
  2. Add powdered sugar gradually and mix until blended.
  3. Whip the heavy cream in another bowl until stiff peaks form.
  4. Fold the whipped cream into the cream cheese mixture gently.
  5. Incorporate lemon juice, lemon zest, and vanilla extract; fold gently.
  6. Pour the filling into the graham cracker crust and smooth the top.
  7. Chill in the refrigerator for at least 4 hours or until set.
  8. Serve chilled, garnished with lemon slices if desired.

Notes

For best flavor, prepare a day in advance. Can make individual cheesecakes in muffin tins.
