Mexican Chicken with Cheese Sauce

  • 2 Chicken Breasts, diced
  • 1 cup Cheese (cheddar and Monterey Jack blend)
  • 1 Bell Pepper, diced
  • 1 Onion, diced
  • 1 tsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Garlic Powder
  • Salt and Pepper to taste
  • 1/2 cup Cream
  • Olive Oil for cooking

Instructions

  1. Prepare the chicken by dicing it into bite-sized pieces and seasoning with chili powder, cumin, garlic powder, salt, and pepper.
  2. Cook the chicken in a heated skillet with olive oil for 5-7 minutes until fully cooked.
  3. Add the diced bell peppers and onions to the skillet and sauté for an additional 3-4 minutes.
  4. Make the cheese sauce by lowering the heat, adding cream, and gradually mixing in the cheese until melted and creamy.
  5. Combine the cheese sauce with the chicken and vegetables, letting it simmer for a couple of minutes before serving.
