A flavorful Mediterranean dish featuring tender baked fish enhanced by lemon, cherry tomatoes, and olives, perfect for any occasion.

  • 2 fish fillets (cod or tilapia)
  • 1 lemon, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, pitted
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley, chopped
  • Crusty bread (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the baking dish by lightly greasing it with olive oil.
  3. Layer the fish fillets in the dish, ensuring a bit of space between each piece.
  4. Add the lemon slices on top of the fish, then scatter the cherry tomatoes and olives around.
  5. Season with minced garlic, oregano, and drizzle with olive oil.
  6. Bake in the oven for 20-25 minutes until the fish is opaque and flakes easily.
  7. Garnish with fresh parsley and serve hot, with crusty bread if desired.
