Mediterranean Baked Fish

A vibrant and flavorful Mediterranean baked fish dish featuring tender cod or tilapia, fresh vegetables, and aromatic herbs.

  • 2 Cod or Tilapia Fillets
  • 1 Lemon, sliced
  • 1 cup Cherry Tomatoes
  • 1/2 cup Black Olives
  • 3 cloves Garlic, minced
  • 1 tsp Oregano
  • 3 tbsp Olive Oil
  • Fresh Parsley, for garnish
  • Crusty Bread, for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the cod or tilapia fillets in a baking dish.
  3. Layer the fillets with slices of lemon, cherry tomatoes, and black olives.
  4. Sprinkle minced garlic and oregano over the top.
  5. Drizzle with olive oil to coat the ingredients.
  6. Bake for 20-25 minutes until the fish is cooked through and flakes easily.
  7. Garnish with fresh parsley and serve with crusty bread.

Notes

Make ahead by prepping ingredients a few hours in advance. Can substitute with other white fish like snapper or haddock.
