Mediterranean Baked Feta Eggs

A comforting dish of rich, golden eggs combined with creamy feta and juicy cherry tomatoes, perfect for breakfast, brunch, or a light dinner.

  • 200 g Feta Cheese
  • 1 cup Cherry Tomatoes
  • 2 cloves Garlic
  • 1 small Shallot
  • 3 large Eggs
  • 2 tablespoons Olive Oil
  • 0.5 teaspoon Dried Oregano
  • 0.25 teaspoon Crushed Red Pepper Flakes
  • Salt to taste
  • Fresh Parsley or Basil for garnish

Instructions

  1. Preheat the Oven: Set your oven to 375°F (190°C).
  2. Prepare the Baking Dish: Drizzle olive oil in the dish and spread cherry tomatoes evenly.
  3. Add Aromatics: Sprinkle minced garlic and finely chopped shallots over the tomatoes.
  4. Nestle in the Feta: Place feta cheese in the center of the tomatoes.
  5. Season Generously: Sprinkle oregano and red pepper flakes, and add a pinch of salt.
  6. Prepare the Eggs: Whisk the room-temperature eggs and pour them around the feta and tomatoes.
  7. Bake to Perfection: Bake for 20 minutes, checking halfway to see if the eggs firm up.
  8. Garnish and Serve: Sprinkle with fresh herbs and enjoy with crusty bread.

Notes

For a make-ahead option, prepare everything until the baking step and refrigerate. Bake directly from the fridge when ready to serve.
