Mediterranean Baked Eggs with Feta

  • 100g feta cheese, crumbled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup spinach, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the halved cherry tomatoes, chopped spinach, and olive oil in a baking dish.
  3. Season with salt, pepper, and oregano, and toss to coat.
  4. Create four wells in the vegetable mixture.
  5. Crack an egg into each well.
  6. Sprinkle with crumbled feta.
  7. Bake for 15-20 minutes until eggs are set to your liking.
  8. Garnish with fresh parsley before serving.
