Maui Wowie Chicken Sandwich

A delightful sandwich featuring crispy fried chicken, tropical pineapple, and creamy sauce, delivering a taste of paradise with every bite.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper (optional)
  • 4 burger buns
  • 1 cup shredded lettuce
  • 1 cup sliced tomatoes
  • ½ cup sliced red onion
  • 1 cup pineapple slices (fresh or canned)
  • ½ cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon lime juice
  • Olive oil for frying

Instructions

  1. Marinate the chicken: Place the chicken breasts in a large mixing bowl and cover them with buttermilk. Allow them to marinate for at least 30 minutes.
  2. Prepare the coating: In a separate bowl, combine the flour, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper. Mix it well.
  3. Dredge the chicken: Remove the marinated chicken from the buttermilk, letting the excess drip off. Dredge each piece in the flour mixture until fully coated.
  4. Heat the oil: In a heavy skillet, heat about ½ inch of olive oil over medium-high heat until it shimmers.
  5. Fry the chicken: Gently place the coated chicken breasts in the hot oil. Fry for 5-7 minutes on each side until golden brown and internal temperature reaches 165°F (75°C).
  6. Drain the chicken: Remove the chicken from the skillet and place it on a paper towel-lined plate to drain excess oil.
  7. Assemble the sauce: Mix together mayonnaise, sweet chili sauce, and lime juice until blended.
  8. Toast the buns: Lightly toast the burger buns in the skillet or oven until golden brown.
  9. Build the sandwich: Spread sauce on the bottom bun, add fried chicken, then layer with lettuce, tomatoes, red onion, and pineapple. Top with the other bun.

Notes

Marinating chicken overnight in buttermilk gives maximum flavor and tenderness. Customize with jalapeños or swap pineapple for mango if desired.
