Mashed Potato Cheese Puffs

Crispy on the outside and creamy with cheese on the inside, these Mashed Potato Cheese Puffs are perfect as an appetizer or side dish.

Ingredients

  • 2 cups mashed potatoes
  • 1 cup cheese (cheddar or mozzarella, shredded)
  • 1/2 cup flour
  • 1/4 cup green onions (chopped)
  • 1 egg
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a mixing bowl, combine mashed potatoes, shredded cheese, flour, green onions, the egg, and salt and pepper. Stir until thoroughly mixed.
  2. Heat oil in a frying pan over medium heat.
  3. Shape small portions of the mixture into balls or patties.
  4. Drop the puffs into the hot oil in batches, frying until golden brown, about 3-4 minutes on each side.
  5. Remove from oil and drain on paper towels, sprinkling with salt.

Notes

You can customize these puffs with ingredients like diced ham, spices, or different types of cheese. For a healthier option, try air frying or baking them.
